Pineapple Juice Cake Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup unsweetened pineapple juice
  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 3 to 4 tbsp pineapple juice (for glaze)
  • 2 tbsp unsalted butter, melted (optional, for glaze)

Method
 

  1. Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Add eggs, oil, 1 cup pineapple juice, sour cream, and vanilla. Whisk until smooth, about 2 minutes.
  3. Grease a 10-cup bundt pan and pour in the batter. Tap the pan on the counter to release air bubbles.
  4. Bake at 350°F (175°C) for 45 to 50 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then invert onto a rack.
  5. Stir powdered sugar with 3 tbsp pineapple juice and melted butter until smooth. Add the last tbsp juice if needed. Drizzle over the cooled cake before slicing.

Notes

Let the cake cool completely before glazing, or the glaze will melt into the crumb and disappear. If you want the glaze to set into a crisp shell, skip the melted butter and use only juice and sugar.
