- Shred the cabbage and grate the carrots; drain the pineapple well and chop larger pieces if needed. Add everything to a large bowl.
- In a small bowl, whisk together the mayo, vinegar, honey, salt, pepper, and Dijon (if using) until smooth.
- Pour the dressing over the cabbage mixture and add the pineapple. Toss until well coated. Let sit 5 minutes, then pile into a serving bowl and serve.
Notes
If making ahead, you can hold off on adding the pineapple until shortly before serving to keep it from becoming too soft; otherwise, it is fine to mix everything and refrigerate for a few hours. The slaw tastes best the day it is made but stays good for a couple of days.
