Pineapple Coleslaw Recipe

Ingredients
  

  • 1 can (14 oz) pineapple tidbits, drained
  • 1 small green cabbage, thinly shredded (about 6 cups)
  • 2 medium carrots, grated
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional)

Method
 

  1. Shred the cabbage and grate the carrots; drain the pineapple well and chop larger pieces if needed. Add everything to a large bowl.
  2. In a small bowl, whisk together the mayo, vinegar, honey, salt, pepper, and Dijon (if using) until smooth.
  3. Pour the dressing over the cabbage mixture and add the pineapple. Toss until well coated. Let sit 5 minutes, then pile into a serving bowl and serve.

Notes

If making ahead, you can hold off on adding the pineapple until shortly before serving to keep it from becoming too soft; otherwise, it is fine to mix everything and refrigerate for a few hours. The slaw tastes best the day it is made but stays good for a couple of days.
