- Preheat oven to 350°F. Grease a 9×13 metal pan. Whisk flour, sugar, baking soda, and salt. Stir in eggs, oil, pineapple, and vanilla, then fold in coconut. Pour into pan.
- Bake 30 to 35 minutes until a toothpick comes out clean. Cool completely.
- Beat cream cheese and butter until smooth. Add powdered sugar in two additions, then beat in coconut extract.
- Spread frosting over the cooled cake.
- Slice strawberries. Arrange a blueberry corner and strawberry rows on top, fill gaps with additional coconut, and serve.
Notes
Add the fruit just before serving. If you are making the cake a day ahead, frost and chill it, then decorate the top a few minutes before you plan to serve so the berries stay bright and the coconut stays dry.
