Pineapple Coconut God Bless America Cake Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tsp baking soda
  • 1/2 tsp fine salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 (20 oz) can crushed pineapple, undrained
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp coconut extract
  • Fresh strawberries and blueberries

Method
 

  1. Preheat oven to 350°F. Grease a 9×13 metal pan. Whisk flour, sugar, baking soda, and salt. Stir in eggs, oil, pineapple, and vanilla, then fold in coconut. Pour into pan.
  2. Bake 30 to 35 minutes until a toothpick comes out clean. Cool completely.
  3. Beat cream cheese and butter until smooth. Add powdered sugar in two additions, then beat in coconut extract.
  4. Spread frosting over the cooled cake.
  5. Slice strawberries. Arrange a blueberry corner and strawberry rows on top, fill gaps with additional coconut, and serve.

Notes

Add the fruit just before serving. If you are making the cake a day ahead, frost and chill it, then decorate the top a few minutes before you plan to serve so the berries stay bright and the coconut stays dry.
