Ingredients
  

  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 1/2 pounds boneless skinless chicken thighs or breasts

Method
 

  1. In a bowl, whisk the pineapple juice, soy sauce, brown sugar, garlic, and ginger until the sugar dissolves.
  2. Place the chicken in a zip-top bag or shallow dish, pour the marinade over it, and refrigerate for 30 minutes up to 4 hours.
  3. Heat a grill or cast iron pan to medium-high, oil the surface, and cook the chicken 5 to 7 minutes per side until it reaches 165°F.
  4. Let the chicken rest 5 minutes, then slice and serve.

Notes

Marinating time is not included in the prep time. Boil any leftover unused marinade for at least 2 minutes before using it as a sauce.
