Method
- Preheat oven to 350°F. Slice dough into ¼ inch rounds and place on a parchment lined baking sheet.
- Press the top of each round into sprinkles and return to sheet sprinkle side up, spacing 2 inches apart.
- Bake 9 to 11 minutes until edges are barely golden. Cool on the sheet 5 minutes, then transfer to a rack to cool completely.
- Melt white chocolate in the microwave in short bursts, stirring until smooth. Drizzle over cooled cookies and let set at room temperature, about 15 minutes.
Notes
These cookies are softest the day of baking. If you want to crisp them up slightly, bake a minute longer. For a glossier drizzle, add ½ teaspoon coconut oil to the white chocolate while melting.
