Pickle Juice Chicken Marinade Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 1 cup dill pickle juice
  • 2 garlic cloves, smashed
  • 1 tbsp olive oil
  • ½ tsp black pepper

Method
 

  1. In a shallow dish or zip-top bag, combine pickle juice, garlic cloves, olive oil, and black pepper.
  2. Pat chicken dry and add to the marinade, turning to coat. Refrigerate for 30 minutes to 2 hours.
  3. Remove chicken from marinade, pat completely dry. Cook in a hot oiled skillet over medium-high heat for 6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  4. Rest the chicken on a cutting board for 5 minutes, then slice against the grain and serve.

Notes

Marinating time of at least 30 minutes is not included in the prep or cook time. For the best texture, don't let boneless breasts sit in the brine longer than 2 hours.
