Ingredients

  • 1 lb ribeye steak, very thinly sliced
  • 4 large bell peppers (any color)
  • 1 medium yellow onion, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 8 slices provolone cheese
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and black pepper

Method

  1. Heat oven to 375°F. In a skillet over medium-high heat, cook onion and mushrooms in olive oil with a pinch of salt until softened, 6 to 8 minutes. Add steak, garlic powder, pepper, and Worcestershire; sear 2 to 3 minutes until just browned. Combine and remove from heat.
  2. Place pepper halves cut-side up in a baking dish. Spoon filling into each pepper, then drizzle any pan juices over the top.
  3. Cover dish with foil and bake 20 minutes. Uncover, top each pepper with a provolone slice, and bake uncovered 10 to 15 minutes more until cheese is melted and peppers are tender.
  4. Let rest a couple of minutes, then transfer to plates and serve hot.

Notes

If you prefer a deeply browned cheese top, switch the oven to broil for the last 1 to 2 minutes. Keep an eye on it so the cheese doesn't burn.
