- Heat an oven-safe skillet over high heat. Pat beef dry, season with salt and pepper, and sear in olive oil in batches until browned, about 2 minutes per batch. Set aside.
- Reduce heat to medium-high, melt butter, and sauté peppers and onion 5 minutes until softened. Stir in garlic and cook 1 minute.
- Remove skillet from heat. Return beef and juices to the pan, add cream cheese and Worcestershire, and stir until creamy. Spread mixture evenly and top with provolone slices.
- Broil on high, 6 inches from the heat, for 3 to 4 minutes until cheeses are bubbly with golden spots. Let rest 2 minutes, then serve straight from the skillet.
Notes
If you cannot find thinly sliced beef, freeze the steak for 20 minutes first; it will firm up and slice much more easily. The casserole is best right away while the cheese is stretchy, but leftovers reheat fine in the oven to keep the topping from toughening.
