Philly Cheese Steak Stuffed Peppers Recipe

Ingredients
  

  • 4 large bell peppers, any color
  • 1 lb ribeye steak, thinly sliced
  • 1 tbsp olive oil, plus more for brushing
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 8 slices provolone cheese

Method
 

  1. Preheat oven to 400°F. Halve the peppers, remove seeds, brush with oil, season, and set in a baking dish.
  2. Sauté onion and sliced green pepper in olive oil 5 to 7 minutes. Add mushrooms and garlic, cook 3 minutes more.
  3. Push veggies aside and sear steak with Worcestershire, salt, and pepper for 2 minutes per side, then mix everything together and remove from heat.
  4. Stuff peppers, top with provolone, and bake 15 to 20 minutes until cheese is melted and peppers are tender.
  5. Let rest 5 minutes, then plate and serve.

Notes

If your pepper halves wobble, tear a small piece of foil into a ring and nestle the pepper in it so it stays upright. The resting time is already accounted for, so serve while hot and stretchy.
