Ingredients

  • 1 lb ground beef, 85/15
  • 1 small yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1/2 cup beef broth
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 slices provolone cheese
  • 4 hoagie rolls or soft burger buns
  • Butter, for the rolls

Method

  1. Brown the ground beef in a large oven-safe skillet over medium-high heat until no pink remains, 5 to 7 minutes. Drain excess fat and set the beef aside.
  2. Sauté onion, bell pepper, and mushrooms in the same skillet for 5 to 6 minutes until softened. Stir in garlic and cook 30 seconds more.
  3. Add ketchup, Worcestershire sauce, beef broth, salt, and pepper. Bring to a simmer, return the beef to the pan, and cook 5 minutes until the sauce thickens slightly.
  4. Butter the rolls and broil cut-side up on a sheet pan for 1 to 2 minutes until toasted. Spoon the filling onto the bottom halves, top with provolone, and broil another 2 minutes until bubbly and spotty brown. Cap with the top buns and serve.

Notes

The filling is meant to be saucy, not dry. If it looks thick while simmering, splash in a little extra broth. Toasting the buns is non-negotiable here; it keeps them from turning to mush under the hot filling.
