Pesto Chicken Marinade Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • ½ cup basil pesto
  • 2 tbsp fresh lemon juice
  • 1 tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. In a medium bowl, whisk together the pesto, lemon juice, salt, and pepper until smooth.
  2. Add the chicken breasts and turn to coat well. Cover and refrigerate at least 30 minutes, up to 4 hours.
  3. Heat a grill or grill pan to medium-high. Grill the chicken 6 to 7 minutes per side, until a thermometer reads 165°F in the thickest part.
  4. Let the chicken rest 5 minutes, then slice against the grain and serve warm.

Notes

If you want to use some of the marinade as a finishing sauce, set aside a few tablespoons before it touches the chicken. The rest must be discarded after marinating. Baked chicken works just as well; see the timing table above.
