Ingredients
  

  • 1/4 cup (57g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (63g) all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons whole milk
  • 1/2 cup (120ml) cold heavy cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • Sprinkles, for decorating

Method
 

  1. Preheat oven to 350°F (175°C) and line a small loaf pan (3x6 inches) with parchment. Beat butter and sugar until fluffy, then mix in egg and vanilla. Add flour, baking powder, salt, and milk in alternating additions, mixing just until smooth.
  2. Spread batter into the pan and bake 18 to 20 minutes, until golden and a toothpick comes out clean. Cool completely on a wire rack.
  3. Whip cold heavy cream with powdered sugar and vanilla to soft peaks.
  4. Cut two 4‑inch circles from the cake using a cookie cutter. Layer with whipped cream.
  5. Frost the top and sides with remaining cream, top with sprinkles, and serve.

Notes

This cake is best the day it is made but keeps in the fridge for up to 2 days. If the cake domes, trim it flat before layering. Let the cake cool fully before you add the frosting.
