Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon peppermint extract
  • 1/4 cup finely crushed candy canes

Method
 

  1. Beat butter and powdered sugar until light and fluffy, about 2 minutes.
  2. Mix in flour and peppermint extract, then fold in crushed candy canes until evenly distributed.
  3. Shape dough into a 2-inch log on plastic wrap, wrap tightly, and chill at least 30 minutes.
  4. Preheat oven to 350°F. Slice log into ¼-inch rounds, place on parchment-lined sheets, and bake 12–14 minutes until edges are lightly golden.
  5. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

If the dough becomes too soft while slicing, refrigerate it for another 10 minutes before continuing. For a festive touch, sprinkle a pinch of extra crushed candy cane on top of the cookies right after they come out of the oven.
