Peppermint Brownie Cookies Recipe

Ingredients
  

  • 1/2 cup (1 stick) unsalted butter, melted and cooled slightly
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg plus 1 egg yolk, at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine salt
  • 3/4 cup semisweet chocolate chips or chunks
  • 1/4 cup crushed candy canes or peppermint candies, for topping

Method
 

  1. Preheat oven to 350°F (180°C) and line two baking sheets with parchment. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until glossy. Whisk in egg, egg yolk, vanilla, and peppermint extract.
  2. Sift flour, cocoa, baking soda, and salt over the wet mixture. Stir just until no dry streaks remain.
  3. Fold in chocolate chips. Cover and chill dough for 30 minutes until firm.
  4. Scoop rounded tablespoonfuls of dough onto baking sheets, 2 inches apart. Press crushed candy cane onto the top of each ball.
  5. Bake one sheet at a time for 10 to 12 minutes, until edges are set and centers look soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Chill time is 30 minutes and is not included in the prep time. For the most even baking, bake one sheet at a time on the middle rack. If you love a strong mint flavor, increase the peppermint extract to 3/4 tsp and taste the batter before adding the dry ingredients.
