Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 cup full-fat sour cream, at room temperature
  • ¼ cup whole milk, at room temperature
  • 2 cups butter, softened (for buttercream)
  • 6 cups icing sugar
  • 4-6 tbsp milk
  • 2 tsp vanilla extract (for buttercream)
  • Red and black gel food colouring
  • White fondant, a palm-sized ball
  • Dark chocolate frosting or black gel icing

Method

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round pans and line with parchment. Whisk flour, baking powder, and salt in a bowl. Beat butter and sugar until pale and fluffy, about 4 minutes. Add eggs one at a time, then vanilla. Mix in dry ingredients and sour cream alternately, finishing with dry. Fold in milk.
  2. Divide batter between pans and smooth tops. Bake for 28-32 minutes until a toothpick comes out clean. Cool in pans for 10 minutes, then turn out onto a rack to cool completely.
  3. Beat butter for buttercream until white. Sift in icing sugar, add vanilla and 4 tbsp milk, then whip on high for 4 minutes. Add more milk if needed. Reserve 1 cup; tint the rest sky blue. Tint the reserved cup bright pink.
  4. Level cake layers, fill and stack with blue buttercream, then frost the top and sides fully blue. Smooth with a scraper.
  5. Place a Peppa Pig printed outline on the top and trace with a toothpick. Fill the shape with pink buttercream. Pipe dark icing over the outline, add fondant eyes and cheeks, and pipe the smile and forehead tail. Serve immediately or refrigerate.

Notes

Print the template before you start baking so you are not searching for a printer with sticky hands. If the cake is for a younger crowd, swap the fondant for piped buttercream features to avoid any firm bits.
