Pecan Pie Filling Recipe

Ingredients
  

  • 6 tbsp unsalted butter
  • 1 cup packed light brown sugar
  • 3/4 cup light corn syrup
  • 3 large eggs
  • 1/4 tsp fine salt
  • 2 tsp vanilla extract
  • 2 cups pecan halves

Method
 

  1. Melt the butter in a saucepan over medium heat and toast the pecans for 3 to 4 minutes until fragrant; set pecans aside.
  2. Whisk the brown sugar, corn syrup, eggs, and salt together until smooth.
  3. Return the butter to low heat and slowly whisk in the egg mixture, cooking for 6 to 8 minutes until thick enough to coat a spoon.
  4. Remove from heat, stir in vanilla and toasted pecans, then pour into a baked crust and refrigerate for at least 2 hours before slicing.

Notes

The filling needs at least 2 hours to chill and set fully; overnight is even better for clean slices. If you’re serving it warm as a sauce, skip the chilling and spoon it straight from the pan.
