Method
- Melt the butter in a saucepan over medium heat and toast the pecans for 3 to 4 minutes until fragrant; set pecans aside.
- Whisk the brown sugar, corn syrup, eggs, and salt together until smooth.
- Return the butter to low heat and slowly whisk in the egg mixture, cooking for 6 to 8 minutes until thick enough to coat a spoon.
- Remove from heat, stir in vanilla and toasted pecans, then pour into a baked crust and refrigerate for at least 2 hours before slicing.
Notes
The filling needs at least 2 hours to chill and set fully; overnight is even better for clean slices. If you’re serving it warm as a sauce, skip the chilling and spoon it straight from the pan.
