- Heat oven to 350°F (175°C). Grease a 24-cup mini muffin pan. Mix graham crumbs, melted butter, and sugar; press 1 tsp into each cup. Bake 5 minutes.
- In a saucepan over medium heat, melt butter and brown sugar until bubbling, about 2 minutes. Off heat, stir in vanilla and salt; cool 3 minutes, then whisk in egg until glossy. Fold in ½ cup pecans.
- Spoon filling evenly over the crusts, then top with the remaining ¼ cup pecans.
- Bake 12 to 15 minutes until set. Cool in pan 10 minutes, then loosen edges and remove. Serve warm or at room temperature.

Makes 24 mini bites total; the recipe serves 12 people as written. If you want them fully set and sliceable, let them cool completely in the pan before removing. They keep well at room temperature for the first day, then refrigerate. For a slightly firmer bite, swap one tablespoon of the brown sugar for an equal amount of honey.
