Method
- Preheat the oven to 350°F (175°C). Line a 10×15 inch rimmed baking sheet with parchment, leaving overhang. Arrange graham crackers in a single layer, breaking to fit.
- In a saucepan over medium heat, melt the butter, brown sugar, and a pinch of fine sea salt, stirring constantly. Bring to a boil and boil for 2 minutes. Remove from heat and stir in the vanilla. Pour immediately over the crackers and spread evenly.
- Sprinkle the pecans over the top and bake for 10 minutes, until the caramel is bubbling across the whole surface. Remove from the oven and sprinkle with flaky salt if using.
- Cool completely on a wire rack, about 30 minutes. Lift the bark out with the parchment, then snap it into shards.
Notes
The bark must be fully cool before breaking or it will be chewy, not crisp. For a chocolate version, melt ½ cup semisweet chocolate chips and drizzle over the cooled bark before snapping it into pieces. Store leftovers in an airtight container at room temperature for up to a week.
