Ingredients
  

  • 4 (6 oz) salmon fillets
  • 1 cup pecans, finely chopped
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • Lemon wedges, for serving

Method
 

  1. Preheat the oven to 400°F (200°C). In a bowl, mix the chopped pecans, honey, olive oil, 1/4 tsp salt, and a pinch of pepper until the pecans are evenly coated.
  2. Pat the salmon dry, season with salt and pepper, then brush the tops with Dijon mustard. Press the pecan mixture firmly onto the mustard-coated surface.
  3. Place the fillets on a lined sheet pan and bake for 12-15 minutes, until the salmon flakes easily and the crust is golden. For extra crunch, broil for 1-2 minutes, watching closely.
  4. Serve immediately with a squeeze of fresh lemon.

Notes

Let the salmon rest 2 minutes after baking so the crust sets. Store leftovers in the fridge up to 2 days; reheat in a low oven to keep the top crisp.
