Ingredients
  

  • 1/2 cup packed light brown sugar
  • 1/2 cup all-purpose flour (for streusel)
  • 1 teaspoon ground cinnamon
  • Pinch of salt (for streusel)
  • 1/4 cup unsalted butter, melted
  • 1 cup pecans, chopped
  • 1 3/4 cups all-purpose flour (for cake)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt (for cake)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup full-fat sour cream, at room temperature

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9-inch square pan. Mix brown sugar, 1/2 cup flour, cinnamon, a pinch of salt, and melted butter into damp sand; fold in pecans.
  2. Cream softened butter and granulated sugar until pale and fluffy, about 3 minutes. Beat in eggs one at a time, then vanilla.
  3. Whisk 1 3/4 cups flour, baking powder, baking soda, and salt. Add alternately with sour cream to butter mixture, mixing just until no streaks remain.
  4. Spread batter evenly in pan. Sprinkle streusel over top. Bake 35 to 40 minutes until a toothpick comes out clean.
  5. Cool in pan on a wire rack for 20 minutes, then slice and serve.

Notes

This cake tastes even better the next day as the streusel softens slightly and the spice sinks in. If you'd like a little extra sweetness, whisk together powdered sugar and a splash of milk and drizzle a simple glaze over the warm top.
