Ingredients
  

  • 2 cans (21 oz each) peach pie filling
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans
  • ½ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup (1½ sticks) unsalted butter, thinly sliced

Method
 

  1. Preheat oven to 350°F. Spread the peach pie filling evenly in a 9x13‑inch baking dish.
  2. Stir together the cake mix, brown sugar, and cinnamon. Sprinkle over the filling. Scatter the pecans on top. Cut the butter into ¼‑inch slices and arrange them over the entire surface.
  3. Bake for 45 to 50 minutes, until the top is golden brown and the filling is bubbling. Let cool 10 minutes.
  4. Scoop into bowls and serve warm with vanilla ice cream or a drizzle of cream.

Notes

The cobbler is best served warm, but it holds well at room temperature for a couple of hours. For a crisper top, place it under the broiler for 1 to 2 minutes after baking. Watch it closely so the pecans do not burn.
