Pearl Couscous Salad Recipe

Ingredients
  

  • 1 cup pearl couscous
  • 1 1/4 cups water or light vegetable broth
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced English cucumber
  • 1/4 cup finely chopped red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint

Method
 

  1. Bring water or broth to a boil, add couscous and a pinch of salt, then simmer covered for 8 to 10 minutes until tender. Spread on a plate to cool and fluff with a fork.
  2. Whisk olive oil, lemon juice, red wine vinegar, salt, and pepper in a large bowl until combined.
  3. Halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and chop the parsley and mint.
  4. Add the cooled couscous, tomatoes, cucumber, onion, and about two-thirds of the feta and herbs to the dressing. Fold gently to coat. Let sit 10 minutes, then top with remaining feta and herbs before serving.

Notes

If your lemons are particularly tart, add a tiny pinch of sugar to the dressing. This salad is best served at room temperature or lightly chilled, not straight from the fridge.
