- Heat oil in a large pot over medium heat. Add onion and a pinch of salt; cook 5 minutes until soft. Add garlic and ginger, cook 1 minute.
- Stir in cumin, coriander, and cayenne; cook 30 seconds. Add diced tomatoes and cook 2 minutes, scraping up any browned bits.
- Add vegetable broth, sweet potatoes, chickpeas, and peanut butter. Stir well, bring to a boil, then reduce heat to a simmer. Cover and cook 20 to 25 minutes until sweet potatoes are fork-tender.
- Remove from heat. Add spinach and stir until wilted, about 2 minutes. Season with salt to taste.
- Ladle into bowls and top with chopped peanuts and cilantro if using. Serve hot.
Notes
The stew will thicken as it cools. When reheating, add a splash of water or broth to loosen it up. It tastes even better the next day.
