Peanut Sauce Noodles Recipe

Ingredients
  

  • 8 oz dried noodles
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar or honey
  • 1 tsp grated fresh ginger (optional)
  • 1 garlic clove, minced (optional)
  • 2-3 tbsp warm water
  • Toppings: sliced scallions, crushed peanuts, chili crisp (optional)

Method
 

  1. Whisk together peanut butter, soy sauce, rice vinegar, sesame oil, brown sugar, ginger, and garlic. Slowly stir in warm water until the sauce is smooth and pourable.
  2. Cook noodles according to package directions until just tender. Drain and rinse briefly with cold water.
  3. Toss the noodles with the sauce until every strand is coated. Divide into bowls and top with scallions, peanuts, and chili crisp. Serve warm or at room temperature.

Notes

The sauce can be made up to a week ahead. If adding vegetables, toss them in raw or blanched right before serving. Leftover noodles thicken in the fridge, so stir in a little water when reheating.
