Ingredients
  

  • ½ cup smooth peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 3 to 4 tbsp warm water
  • Pinch of salt, if needed

Method
 

  1. Whisk together the peanut butter, soy sauce, lime juice, honey, garlic, and ginger in a medium bowl until a thick paste forms.
  2. Gradually whisk in the warm water, one tablespoon at a time, until the sauce is smooth and coats the back of a spoon.
  3. Taste, add a pinch of salt or more lime if needed, then pour into a serving bowl. Serve with spring rolls or fresh vegetables.

Notes

If the sauce firms up after refrigeration, stir in a splash of warm water to loosen it. For extra depth, add a teaspoon of toasted sesame oil or a pinch of red pepper flakes.
