- Whisk the flour, sugar, baking powder, and salt in a large bowl.
- Add the milk, egg, melted butter, peanut butter, and vanilla and whisk just until combined.
- Heat a greased skillet over medium heat, pour 1/4 cup batter per pancake, and cook until bubbly on top, about 2 to 3 minutes. Flip and cook 1 to 2 minutes until golden.
- Stack the pancakes, top with butter and maple syrup, and add sliced banana or chopped peanuts if you like.
Notes
If you have a few extra minutes, let the batter rest for 5 minutes before cooking for a slightly taller rise. Wipe the pan clean between batches if any butter residue starts to burn.
