Peanut Butter Pancakes Recipe

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted and cooled
  • 1/3 cup creamy peanut butter
  • 1 tsp vanilla extract

Method
 

  1. Whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. Add the milk, egg, melted butter, peanut butter, and vanilla and whisk just until combined.
  3. Heat a greased skillet over medium heat, pour 1/4 cup batter per pancake, and cook until bubbly on top, about 2 to 3 minutes. Flip and cook 1 to 2 minutes until golden.
  4. Stack the pancakes, top with butter and maple syrup, and add sliced banana or chopped peanuts if you like.

Notes

If you have a few extra minutes, let the batter rest for 5 minutes before cooking for a slightly taller rise. Wipe the pan clean between batches if any butter residue starts to burn.
