Ingredients
  

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1 cup coarsely crushed Oreo cookies (about 10 cookies)

Method
 

  1. Whisk flour, baking soda, and salt in a medium bowl.
  2. Beat butter, granulated sugar, and brown sugar in a large bowl with a mixer until pale and fluffy, about 2 minutes.
  3. Add peanut butter, egg, and vanilla; beat on low until smooth, about 30 seconds.
  4. Mix in the flour mixture on low just until combined, then fold in crushed Oreos by hand.
  5. Preheat oven to 350°F (175°C). Drop heaping tablespoon mounds of dough onto parchment-lined baking sheets, 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are set.
  6. Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely. Serve warm or at room temperature.

Notes

The dough can be made ahead and refrigerated for up to 2 days before scooping. If your kitchen is warm, pop the shaped dough mounds in the fridge for 15 minutes before baking so they hold their shape better.
