- Whisk flour, baking soda, and salt in a medium bowl.
- Beat butter, granulated sugar, and brown sugar in a large bowl with a mixer until pale and fluffy, about 2 minutes.
- Add peanut butter, egg, and vanilla; beat on low until smooth, about 30 seconds.
- Mix in the flour mixture on low just until combined, then fold in crushed Oreos by hand.
- Preheat oven to 350°F (175°C). Drop heaping tablespoon mounds of dough onto parchment-lined baking sheets, 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are set.
- Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely. Serve warm or at room temperature.
Notes
The dough can be made ahead and refrigerated for up to 2 days before scooping. If your kitchen is warm, pop the shaped dough mounds in the fridge for 15 minutes before baking so they hold their shape better.
