Peanut Butter Noodles Recipe

Ingredients
  

  • 8 oz dried noodles (spaghetti or lo mein)
  • 1/2 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey or maple syrup
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1/4 to 1/2 tsp red pepper flakes or sriracha
  • 2 green onions, sliced, for serving
  • Sesame seeds, for serving

Method
 

  1. Cook noodles in boiling water until al dente, about 8 to 10 minutes. Reserve 1/2 cup pasta water, then drain.
  2. In a large bowl, whisk peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and chili flakes until smooth.
  3. Add hot noodles to the bowl. Toss with tongs, adding splashes of reserved pasta water until the sauce turns glossy and coats the noodles. Serve topped with green onions and sesame seeds.

Notes

If you want a spicier bowl, double the chili flakes or drizzle chili oil on top. The sauce will thicken as it cools, so add a little water when reheating.
