Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Method
 

  1. Preheat oven to 350°F (180°C) and line two baking sheets with parchment. Beat butter, peanut butter, brown sugar, and granulated sugar until pale and fluffy, about 2 minutes.
  2. Mix in the egg and vanilla until combined.
  3. Fold in flour, baking soda, and salt on low speed just until no dry streaks remain.
  4. Gently stir in the mini marshmallows.
  5. Scoop tablespoon-sized mounds onto the prepared sheets, 2 inches apart. Bake for 10 to 12 minutes, until edges are golden and centers look slightly underdone.
  6. Cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes

If the dough is too sticky to scoop easily, chill it for 15 minutes. The cookies will hold their shape better. For a chewier texture, pull them out of the oven when the centers still look glossy and soft.
