Ingredients
  

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 6 cups cornflakes

Method
 

  1. In a large saucepan over medium heat, combine the sugar and corn syrup. Stir constantly until the sugar dissolves and the mixture comes to a full boil.
  2. Remove the pan from the heat and stir in the peanut butter until smooth and glossy.
  3. Fold in the cornflakes until evenly coated, then drop heaping tablespoons onto a parchment-lined baking sheet.

Notes

Let the cookies cool and set at room temperature for at least 30 minutes before serving. If your mixture gets stiff while you scoop, warm it over very low heat for a minute and stir gently to loosen.
