Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (180°C) and line an 8x8 inch pan with parchment paper.
  2. Beat butter, peanut butter, brown sugar, and granulated sugar until fluffy, about 2 minutes. Beat in egg and vanilla.
  3. Add flour, baking soda, and salt. Mix on low just until combined and no flour streaks remain.
  4. Press dough evenly into the pan. Use a fork to press a crosshatch pattern on top.
  5. Bake 22 to 25 minutes until edges are golden and center looks set. Cool completely in the pan.
  6. Lift out using the parchment, slice into 16 squares, and serve.

Notes

For the best texture, make sure your butter and peanut butter are at cool room temperature, not melted. If you want a thinner bar, a 9x9 inch pan works with the same amount of dough, just reduce the bake time by a few minutes as noted above.
