- Preheat oven to 350°F (175°C). Line two baking sheets with parchment.
- Whisk together flour, baking soda, and salt in a bowl.
- In a large bowl, beat butter, granulated sugar, and brown sugar until pale and fluffy, about 2 minutes.
- Beat in peanut butter, egg, egg yolk, and vanilla until smooth.
- Mix in the flour mixture on low just until combined, then fold in chocolate chips.
- Scoop tablespoonfuls of dough onto sheets, spacing 2 inches apart. Bake for 10 to 12 minutes, until edges are set and lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
For the best texture, don’t substitute natural peanut butter; the cookies rely on the stabilizers in commercial peanut butter to stay chewy. If you want larger cookies, scoop 2-tablespoon mounds and bake for 13 to 15 minutes.
