Peanut Butter Chia Pudding Recipe

Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup milk (dairy or unsweetened oat milk)
  • 2 tbsp creamy peanut butter
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Method
 

  1. Whisk milk, chia seeds, vanilla, and salt in a bowl for 30 seconds. Let stand 5 minutes, then whisk again until no clumps remain.
  2. Add peanut butter and maple syrup, whisking until completely smooth and evenly colored.
  3. Divide between 2 jars, cover, and refrigerate at least 2 hours. Before serving, top with extra peanut butter, chopped peanuts, and banana slices.

Notes

Chill the pudding at least 2 hours, but overnight gives the seeds plenty of time to soften fully. If it thickens too much in the fridge, stir in a little milk right before you dig in.
