Peanut Butter Burger with Crispy Bacon Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 4 slices thick-cut bacon
  • 4 hamburger buns
  • 4 tbsp creamy peanut butter
  • 1 to 2 tsp sriracha
  • 1 tsp vegetable oil
  • 1 tbsp butter
  • Salt and freshly ground black pepper

Method
 

  1. Cook the 4 bacon slices in a cold skillet over medium heat until crisp, about 6 to 8 minutes. Transfer to a paper towel-lined plate, leaving the drippings in the pan.
  2. Divide the 1 lb ground beef into 4 equal portions, shape into ½-inch-thick patties, and season both sides with salt and pepper.
  3. Place the skillet with the bacon fat over medium-high heat, add 1 tsp vegetable oil if needed, and sear the patties without moving them for 3 to 4 minutes per side for medium-rare (130°F to 135°F).
  4. Brush the cut sides of 4 buns with bacon fat or melted butter and toast in the skillet for 1 to 2 minutes. Spread 1 tbsp peanut butter on each bottom bun.
  5. Place a patty on each bun, top with bacon and a drizzle of sriracha, close with the top bun, and serve immediately.

Notes

If your peanut butter is unsweetened, stir 1 tsp honey into the 4 tbsp before spreading to balance the salt. Letting the patties rest at room temperature for 15 minutes before cooking helps them cook more evenly, but you can go straight from the fridge if you are short on time.
