- Preheat oven to 350°F (175°C) and line two baking sheets. Cream butter and sugars until light, then add egg and vanilla. Mix in flour, baking soda, and salt to form a soft base dough.
- Divide dough in half. Mix cocoa powder (and 1 tbsp milk if the dough feels dry) into one portion until no streaks remain. Mix peanut butter and powdered sugar into the other portion until smooth.
- Take a scant tablespoon of each dough, press together side by side, and gently roll into a ball. Place on a baking sheet and repeat, spacing cookies 2 inches apart.
- Bake for 10 to 12 minutes, until edges set and centers look slightly soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
The centers will look a little underdone when you take them out, and that’s exactly what keeps them fudgy. If you prefer a crisper cookie, add 1 to 2 minutes to the bake time. Chilling the dough is not required, but you can refrigerate it briefly for easier handling on a warm day.
