- Heat oven to 375°F (190°C) and line two baking sheets with parchment. Whisk flour, baking soda, and salt in a bowl.
- Beat butter, peanut butter, granulated sugar, and brown sugar on medium until light and fluffy, about 2 minutes. Add eggs and vanilla, beat until smooth.
- Mix in the flour on low speed just until combined. Scoop rounded tablespoons of dough, roll into balls, then coat in extra granulated sugar. Place 2 inches apart on the sheets.
- Bake one sheet at a time for 8 to 10 minutes, until puffed and crackly on top. Immediately press a kiss into the center of each cookie, cool on the sheet for 2 minutes, then transfer to a rack.
Notes
The kisses will feel soft when you press them in but they firm up as the cookies cool. If you like a deeper peanut flavor, use dark brown sugar instead of light.
