Ingredients
  

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (dairy or unsweetened oat)
  • 1/2 ripe banana, mashed (about 1/4 cup)
  • 2 tbsp creamy peanut butter
  • 1 tbsp maple syrup or honey
  • 1 tbsp chia seeds (optional)
  • 1/4 tsp vanilla extract
  • Pinch of salt

Method
 

  1. In a jar or bowl, mash the banana. Add milk, peanut butter, maple syrup, vanilla, and salt. Whisk until smooth.
  2. Stir in the rolled oats and chia seeds until combined. Cover and refrigerate overnight or at least 4 hours.
  3. In the morning, stir the oats and thin with a little milk if needed. Top with banana slices, a drizzle of peanut butter, or chopped peanuts.

Notes

The oats need at least 4 hours in the fridge to soften, or overnight for the best texture. If you prefer a thinner consistency, stir in an extra splash of milk before serving.
