Peach Cobbler Cinnamon Rolls Recipe

Ingredients
  

  • 3/4 cup whole milk, warm (110°F / 43°C)
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 3 1/4 cups all-purpose flour, spooned and leveled
  • 1 tsp fine sea salt
  • 2 cups diced fresh peaches (about 2 large)
  • 1/3 cup packed brown sugar (for the filling)
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon (plus 2 tsp for the swirl)
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 3 tbsp unsalted butter, very soft (for the swirl)
  • 1/3 cup packed brown sugar (for the swirl)
  • 1/2 cup all-purpose flour (for the crumble)
  • 1/4 cup old-fashioned rolled oats
  • 1/4 cup granulated sugar (for the crumble)
  • 1/2 tsp ground cinnamon (for the crumble)
  • 4 tbsp unsalted butter, cold and cubed (for the crumble)
  • 1 cup powdered sugar
  • 2 to 3 tbsp whole milk
  • 1/2 tsp vanilla extract

Method
 

  1. Whisk warm milk, yeast, and 1/4 cup sugar. Let sit 5 minutes until foamy. Stir in egg and melted butter, then flour and salt. Mix, knead 6 to 8 minutes until smooth. Rise in a buttered bowl 1 hour until doubled.
  2. Cook peaches with 1/3 cup brown sugar, cornstarch, 1 tsp cinnamon, nutmeg, and lemon juice over medium heat 5 to 7 minutes until thick. Cool completely.
  3. Punch dough down, roll to 12x16 inches. Spread 3 tbsp soft butter, sprinkle with 1/3 cup brown sugar and 2 tsp cinnamon. Spoon cooled filling, roll up, cut 12 slices. Place in buttered 9x13 pan, rise 30 to 45 minutes.
  4. Preheat oven to 350°F. Mix 1/2 cup flour, oats, 1/4 cup sugar, 1/2 tsp cinnamon, and 4 tbsp cold butter into a crumble. Sprinkle over risen rolls.
  5. Bake 25 to 30 minutes until golden and bubbling. Cool 5 minutes. Whisk powdered sugar, 2 to 3 tbsp milk, and vanilla; drizzle over warm rolls and serve.

Notes

Plan for about 2 hours of rising time across the two proofs. If your kitchen is cool, the first rise may take closer to 90 minutes. The rolls are best the day they're baked, when the crumble is still crisp.
