Peach Chia Pudding Recipe

Ingredients
  

  • 2 cups diced ripe peaches, divided
  • 1/4 cup chia seeds
  • 3/4 cup milk of choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Blend 1 cup of the diced peaches, the milk, maple syrup, vanilla, and salt until smooth, about 30 seconds.
  2. Pour the mixture into a bowl or large jar, whisk in the chia seeds for 1 minute, then cover and refrigerate at least 3 hours, stirring once after 30 minutes.
  3. Stir the chilled pudding, then layer it with the remaining diced peaches in two glasses.
  4. Top with the last of the peaches and serve cold.

Notes

Chill time is not included in the prep time above, so plan for at least 3 hours in the fridge or make it the night before. The pudding will thicken more overnight and keep for up to 4 days. Riper peaches mean less sweetener needed.
