Ingredients
  

  • 4 cups sliced ripe peaches (about 4 medium)
  • 1 cup fresh blueberries
  • 1/3 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 2/3 cup cold heavy cream, plus extra for brushing
  • Coarse or raw sugar, for topping (optional)

Method
 

  1. Preheat the oven to 375°F (190°C). Toss the peaches, blueberries, 1/3 cup sugar, cornstarch, lemon juice, and vanilla in a bowl. Transfer to a 2-quart baking dish.
  2. Whisk the flour, 1/4 cup sugar, baking powder, and salt. Cut in the butter until the mixture looks like coarse meal. Stir in the 2/3 cup cream just until a shaggy dough forms.
  3. Drop spoonfuls of dough over the fruit. Brush the tops with extra cream and sprinkle with coarse sugar.
  4. Bake for 35 to 40 minutes, until the topping is deep golden and the fruit is bubbly. Let rest 15 minutes, then serve warm.

Notes

If using frozen fruit, do not thaw; increase the bake time by 5 to 10 minutes. For extra crunch on top, sprinkle a little more raw sugar right before the dish goes into the oven.
