- Preheat oven to 350°F (175°C). In a large bowl, whisk together the eggs, milk, maple syrup, melted butter, and vanilla until smooth.
- In a separate bowl, stir together the oats, cinnamon, baking powder, and salt.
- Pour the dry ingredients into the wet mixture and stir just until combined. Gently fold in the peaches.
- Butter an 8x8-inch baking dish, pour in the mixture, and bake for 40 to 45 minutes, until golden and set in the center.
- Cool on a wire rack for 10 minutes, then scoop into bowls and serve warm with desired toppings.
Notes
Let the oatmeal cool for 10 minutes before serving to help it set. If using frozen peaches, thaw and pat them dry first to avoid a soggy bake. Leftovers reheat well and also taste good cold.
