Ingredients
  

  • 3 cups (375 g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup (226 g) unsalted butter, softened
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1½ cups (360 ml) whole milk, room temperature
  • 2 cups (452 g) unsalted butter, softened (for frosting)
  • 6–7 cups (720–840 g) powdered sugar, sifted
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 3–4 tbsp heavy cream or whole milk
  • Gel food coloring (blue, red, white)
  • Paw Patrol cake toppers

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round pans and line with parchment. Whisk together flour, baking powder, and salt.
  2. Beat 1 cup butter and sugar until pale and fluffy, about 4 minutes. Add eggs one at a time, then vanilla.
  3. Alternate adding the flour mixture and milk in three parts, starting and ending with flour. Mix on low just until combined.
  4. Divide batter between pans and bake 25–28 minutes until a toothpick comes out clean. Cool 10 minutes in pans, then turn onto a rack to cool completely.
  5. Beat 2 cups butter until creamy. Gradually add sifted powdered sugar, salt, vanilla, and cream; beat until fluffy. Tint portions blue, red, and white.
  6. Fill and crumb-coat the cooled layers with white buttercream, chill 15 minutes, then cover with blue frosting. Pipe clouds, add red accents, and place toppers on top.

Notes

If your kitchen is warm, chill the cake layers before frosting to keep the buttercream from sliding. The whole decorated cake can be made the night before and stored covered in the fridge, which actually makes slicing cleaner the next day.
