Pasta Salad Cups Recipe

Ingredients
  

  • 8 oz rotini pasta
  • 4 oz diced salami
  • 6 oz fresh mozzarella balls (bocconcini), halved
  • 1 cup halved cherry tomatoes
  • 1/4 cup sliced fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and black pepper
  • 4 clear plastic cups or small mason jars

Method
 

  1. Cook pasta in salted boiling water until al dente, about 8 minutes. Drain, rinse with cold water, and cool completely.
  2. Whisk olive oil, vinegar, mustard, oregano, salt, and pepper for the dressing. Taste and adjust salt.
  3. Toss cooled pasta with salami, mozzarella, tomatoes, basil, and dressing until evenly coated. Let sit 10 minutes.
  4. Spoon the dressed salad into cups, seal or cover, and chill at least 30 minutes. Serve cold straight from the cup.

Notes

The pasta will soak up the dressing over time, so the salad tastes better after a short rest. If making a few days ahead, add the basil fresh just before closing the cups to keep it green.
