Pasta Egg Frittata Recipe

Ingredients
  

  • 2 cups cooked pasta
  • 6 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp whole milk
  • 2 tbsp butter
  • 1/2 tsp salt
  • Freshly ground black pepper, to taste

Method
 

  1. In a large bowl, whisk the eggs, Parmesan, milk, salt, and pepper until smooth. Add the pasta and toss well to coat.
  2. Melt the butter in a 10-inch oven-safe nonstick skillet over medium heat. Pour in the pasta mixture, spread it evenly, and cook without stirring for 5 minutes.
  3. Preheat the broiler. Transfer the skillet to the oven and broil for 3 to 4 minutes, until puffed and golden.
  4. Remove from the oven, rest 2 minutes, then slide the frittata onto a plate. Slice and serve warm.

Notes

If your cooked pasta is cold from the fridge, the egg mixture will be chilly; just give it an extra minute on the stove before broiling. The frittata tastes great cold the next day, so it doubles as a quick lunch.
