- In a shallow bowl, whisk the egg with 1 tbsp water. In another shallow bowl, combine the panko, Parmesan, garlic powder, and paprika.
- Pat the tilapia dry and season both sides with salt and pepper.
- Dip each fillet into the egg, let the excess drip off, then press into the panko mixture on all sides.
- Heat the olive oil in a large nonstick skillet over medium heat. Fry the fillets for about 4 minutes per side, until golden and the fish flakes easily. Serve with lemon wedges.
Notes
The fish is best right away while the crust is crisp. If you have leftovers, an oven or air fryer reheating will help revive the texture. Pat the fillets extra dry before starting for the crispiest results.
