- Preheat oven to 400°F (200°C). Line a baking sheet with parchment, place cod on it, season lightly with salt and pepper, and spread 2 tbsp mayonnaise over the top of each fillet.
- Mix parmesan, panko, garlic powder, salt, and pepper. Press the crumb mixture firmly onto the mayo-coated fish.
- Lightly spray or drizzle the tops with olive oil. Bake 12 to 15 minutes until fish flakes easily and crust starts to turn golden.
- Switch to broil on high, move rack 6 inches from heat, and broil 2 to 3 minutes until the crust is deep golden and bubbly.
- Transfer fillets to plates, squeeze lemon over the top, and serve immediately.
Notes
Serve the cod right out of the oven while the crust is at its crispiest. If you are cooking for fewer people, the same method works on just two fillets; halve the topping mixture and keep the baking time close to the same for thick pieces.
