Method
- Preheat oven to 400°F. Pat cod fillets dry, season lightly with salt and pepper, then brush the tops with a mixture of the 2 tbsp mayonnaise and 1 tbsp Dijon.
- In a bowl, combine the panko, melted butter, garlic powder, paprika, ½ tsp salt, and pepper. Toss until the crumbs are evenly coated.
- Spoon the panko over the mayo side of each fillet and press firmly so it sticks. Arrange crust side up on a lined baking sheet.
- Roast for 12 to 15 minutes, until fish flakes easily and the crust is deep golden. An internal temp of 140°F at the center is ideal.
- Plate the fillets, squeeze lemon over them, and scatter parsley. Serve immediately.
Notes
This recipe moves quickly, so have your lemon wedges and parsley ready before the fish comes out of the oven. If your cod fillets are uneven, fold the thin end under to create a uniform thickness so everything cooks at the same rate.
