Method
- Preheat oven to 450°F (230°C). In a large bowl, stir together pancake mix, milk, and melted butter until a shaggy dough comes together, about 30 seconds.
- Dust a counter with flour. Pat dough into a 1/2-inch rectangle, fold in half, pat again, and repeat twice more. Finish by patting to 3/4 inch thick. Cut with a floured 2-inch cutter, pressing straight down without twisting, and gather scraps to cut again. You should get 8 biscuits.
- Place biscuits close together on an ungreased baking sheet. Bake 8 to 10 minutes until golden brown and baked through.
- Cool on a rack for 1 minute, then serve warm, split open with butter or jam.
Notes
If your pancake mix contains salt, skip any extra. Leftover biscuits are best reheated in the oven to revive their crisp tops. These are quick-drop biscuit friendly—just spoon the dough straight onto the pan.
