- Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk the buttermilk, eggs, and melted butter, then stir into the dry ingredients until just combined; let the batter rest for 5 minutes.
- Cook ¼-cup portions on a buttered griddle over medium heat for 2 to 3 minutes per side, until golden.
- Slice the bananas, wash the berries, warm the syrup, and crumble the bacon into small bowls.
- Pile the pancakes on a large board, surround them with the toppings, and serve right away.
Notes
A 200°F oven with a wire rack keeps the pancakes warm and crisp while you finish the batch. If you’re feeding a bigger group, double the pancake recipe and cook in two pans at once.
