Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 cups buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 3 tbsp unsalted butter, melted and cooled slightly
  • 1 cup pure maple syrup, warmed
  • 1 cup fresh mixed berries
  • 2 ripe bananas, sliced
  • ½ cup chocolate chips
  • ½ cup toasted chopped pecans or walnuts
  • ½ cup whipped cream or yogurt
  • 6 strips cooked crispy bacon

Method
 

  1. Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk the buttermilk, eggs, and melted butter, then stir into the dry ingredients until just combined; let the batter rest for 5 minutes.
  3. Cook ¼-cup portions on a buttered griddle over medium heat for 2 to 3 minutes per side, until golden.
  4. Slice the bananas, wash the berries, warm the syrup, and crumble the bacon into small bowls.
  5. Pile the pancakes on a large board, surround them with the toppings, and serve right away.

Notes

A 200°F oven with a wire rack keeps the pancakes warm and crisp while you finish the batch. If you’re feeding a bigger group, double the pancake recipe and cook in two pans at once.
