- Whisk flour, sugar, baking powder, and salt together in a large bowl. Make a well, add eggs, buttermilk, melted butter, and vanilla, then stir just until combined.
- Heat a buttered nonstick skillet over medium heat. Pour ¼ cup batter per pancake and cook about 3 minutes on the first side until bubbles cover the surface, then flip and cook 1 to 2 minutes more until golden. Repeat with remaining batter.
- Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla until fluffy.
- Layer pancakes with a spoonful of frosting and a few sprinkles between each, pressing gently. Top the last pancake with the remaining frosting, a heavy sprinkle shower, and any candles you like. Serve right away.
Notes
Work fairly quickly once the pancakes come off the pan so they are still slightly warm when you stack them. If the frosting gets too soft, chill it for 10 minutes before continuing.
